#22. Albacore tuna with truffle, puffed rice, and young cilantro at Supply and Demand

The delicate appearance of chef Steve Wall’s signature dish is deceptive; it’s a powerhouse of flavour. The shy rosy fish shimmers in a puddle of olive and truffle oils while leaves of baby cilantro, snipped chives, lemon juice, and coarse sea salt are sprinkled over top like fairy dust. Waves of intense flavour come — earth, sea, and sun — until the crackle of crisp fried wild rice introduces a distraction that lingers on the tongue.
